  1. Preheat a smoker to 275 degrees F.
  2. For the pork rub: Combine the chili powder, granulated garlic, dry mustard, granulated onion, black pepper, salt and cayenne pepper in a mixing bowl and mix well.
  3. For the sandwich: Season the ribs with the pork rub. Put an even coat on both sides. Don’t be shy. Set aside for 10 minutes to let the rub set.
  4. Place the ribs on the smoker for 3 hours, or until the rub sticks and gets a good color, then pull them off and wrap with aluminum foil. Put back on the smoker for 1 hour. Pull them off and open the aluminum foil. Remove the bones, which should slide right out. Sauce both sides heavily, then close the aluminum foil back up and place back on the smoker just to set the sauce and make it nice and sticky, about 10 minutes. Pull and set them aside. Garnish the bread with the pickles and onions. Place the ribs on the bottom of the bread. Trim if needed. Add the top pieces of bread, slice and enjoy!
