Yumbii Bulgogi Cheesesteak

  1. For the cucumber kimchi: Toss the cucumber and red onion slices with the gochugaru and salt in a bowl. Let sit. In a separate bowl, mix the vinegar, sugar, sesame oil and gochujang into a smooth paste. Combine the paste with the cucumber mixture until evenly coated. Transfer to a sealed jar or vacuum bag and refrigerate for at least 48 hours or up to 7 days.
  2. For the marinated beef: In a bowl, whisk together the soy sauce, pineapple juice, sugar, garlic, scallions and 1/4 cup water. Place the beef and red onions in a shallow dish. Pour the marinade over the top. Cover and refrigerate for a minimum of 2 hours or up to 24 hours.
  3. For the sriracha queso: In a small saucepan over low heat, melt the cheese, half-and-half and sriracha. Stir until smooth.
  4. To assemble: Toast the rolls in a dry skillet over medium-high heat until the edges are golden. Set aside.
  5. In the same skillet, add a little oil. Sear the marinated beef and onions, turning often, until caramelized and cooked through. Place the beef on the toasted rolls (about 8 ounces per sandwich). Ladle warm queso over the meat. Top with cucumber kimchi (1/4 cup or to taste). Sprinkle with the chopped onions and scallions.

The cucumber kimchi is best within 3 days; it’s not for long-term storage like traditional kimchi.
