Kale and Wild Mushroom Paella with Saffron Sauce
This was the number one runaway favorite entrée the entire time Gato was open, and it’s a vegetarian entrée. Ask anyone in the restaurant business and they’ll tell you how rare it is for a totally vegetarian dish to become such a big hit. I guess that’s how you know this one is good. Crispy paella rice, a perfectly steamed egg, kale, and wild mushrooms come together for a dish that is so savory and has so many textural elements, including a saffron sauce that brings it all home.
Iranian Yellow Rice with Saffron
This sunny-hued rice gets its color from saffron. Saffron is an expensive spice, but when used properly, a little goes a long way. It lends a unique bright flavor and sweet earthy aroma. Topped with fried onions and raisins, this simple and fast side dish has a distinct Middle Eastern flair and pairs well with stews and kabobs.
