Pappa al Pomodoro
While traveling in Italy, I ate pappa al pomodoro for the first time. It was life-changing: a Tuscan bread soup with only eight ingredients, and that’s including salt, pepper, and olive oil! I truly have never had something so simple, so affordable, and so delicious. This completely vegan dish has all the texture and depth of Bolognese but in a fraction of the time. It’s a great recipe to make all year round because the only fresh ingredients are onions, garlic, and basil. It's safe to say that I’m obsessed with this soup. It’s amazing to me how such a simple dish can be so transformative.
Waterless Minestrone Soup
Soups traditionally contain some form of added liquid — usually broth or stock (such as chicken, beef, vegetable or fish) or just plain water. We set out to make a soup without added liquid, using vegetables with high water content to create a nutritionally dense broth. Napa cabbage, tomatoes, kale, celery and zucchini all contribute water (as well as fiber and other nutrients) to this healthy soup that contains 16 grams of fiber per serving. Inspired by both the content creator Jon Kung and the flavors of classic minestrone, our version swaps crunchy toasted sourdough for the traditional pasta.
Tomato Dumplings
My grandma always made tomato dumplings when she cooked salmon patties and greens. They're very unique, kind of like tomato soup with fluffy drop biscuit-style dumplings.
