2 cups almond flour (not almond meal)

1/2 teaspoon baking soda

1/4 teaspoon kosher or sea salt

1 stick (8 tablespoons) unsalted butter, at room temperature

1/3 cup coconut sugar

1 large egg, whisked

2 teaspoons pure vanilla extract

1 cup chocolate chips


  1. Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment.
  2. Place the almond flour, baking soda and salt in a food processor and pulse until combined.
  3. Add the butter, coconut sugar, egg and vanilla and pulse until thoroughly combined, about 1 minute. Stir in the chocolate chips.
  4. Spoon the cookie dough onto the prepared baking sheet in 2-tablespoon portions, spacing them apart. Use the palm of your hand to gently press the cookies down and flatten slightly. Bake until golden brown, 8 to 10 minutes. Transfer the cookies to a wire rack to cool. Repeat with the remaining cookie dough.
