Preheat the oven to 275 degrees F. Line 2 baking sheets with a silicone baking mat or parchment.
Place all of the ingredients in a food processor and pulse until smooth.
Using a small ice cream scoop or 1 tablespoon measure, form the dough into 20 balls. Transfer 10 balls to each of the prepared baking sheets. Press down on each ball with the palm of your hand to form cookies.
Bake until golden, 45 to 50 minutes. Remove from the oven and let cool.
