When you can't decide whether you need a restorative drink or a REALLY restorative drink, follow Karl Franz Williams's recipe for Hayman's Tea and infuse a bottle of gin with Earl Grey, knowing you will feel better very, very soon.
Infused gin: Pour the bottle of gin into a 2-quart container with a lid. Add tea bags, stir, and set aside to infuse, 15 minutes. (Don't leave the tea bags in longer or the gin will be bitter.)
The tea-infused gin will take on a rich amber color. Remove and discard the tea bags. Place a funnel over the gin bottle and return the gin to the bottle.
Put lemon juice, honey syrup, St. Germain, and infused gin in a cocktail shaker. Fill a coupe glass with ice cubes to chill. Fill the cocktail shaker with ice cubes. Cover and shake briefly, about 5 seconds. Discard the ice cubes from the coupe glass and strain the cocktail into it. Finish by placing a twisted lemon peel directly on top of the cocktail. Serve.
