3/4 ounce Fresh-squeezed lime juice
3/4 ounce Bay and sage simple syrup
1/4 ounce mango purée
1 1/2 ounces Gin (Ford's preferred brand or anything not too botanical)
Splash of rum agricole (distilled from cane juice)
Fresh sage leaf
To make bay and sage simple syrup, heat equal parts sugar and water with several bay and sage leaves. Once the sugar dissolves, remove from the heat and cool.
