Ingredients

Punch

1 1/2 cups Jamaican rum, preferably Appleton Estate

3 cups white rum, preferably Caña Brava

4 cups fresh pineapple juice

2 cups cinnamon simple syrup (see note), boil 2 C water with 10 cinnamon sticks for 10 mins; add 2 C sugar, boil 10 more minutes and strain

2 cups lime juice, or lemon or grapefruit juice

5 dashes Angostura bitters

Ice cubes

Garnish

3 slices pineapple, thinly sliced

1 lime, sliced into thin wheels

6 sticks cinnamon

3 hibiscus flowers, or flowers of your choice

Directions

  1. Punch: In a large punch bowl add both rums, pineapple juice, cinnamon simple syrup, lime juice, and Angostura bitters. Stir and taste; adjust flavor to your taste by adding more of any of the ingredients.
  2. Garnish punch with pineapple slices, lime wheels, cinnamon sticks and flowers. Serve.
