North America has dominated the avocado oil market with a 50.79 percent share in 2025, which is driven by avocado oil's nutrients and health benefits.

Avocado is a fruit native to Central America, which is grown in warm temperate and subtropical climates throughout the world. The main producers of avocado oil include New Zealand, Mexico, the US, South Africa and Chile. Avocado oil is composed of 69.4 percent monounsaturated fat, 16.6 percent polyunsaturated fat and 14 percent saturated fat. The main percentage of the type of fat is monounsaturated, thus being categorized as a heart-healthy fat linked to cardiovascular and anti-inflammatory benefits.

It should be noted that olive oil, which is also majorly composed of monounsaturated fat, has a quality standard. Avocado oil does not. At this time, there is no international standardized regulation regarding the quality of avocado oil. Using similar definitions as olive oil, virgin avocado oil should be extracted from fresh fruit using only mechanical means, while refined oil is processed with heat or chemicals to remove any flaws.

From a culinary perspective, avocado oil has a high smoke point that is close to 500 degrees Fahrenheit. It has a mild flavor and a slightly green hue. It can be used for cooking on a stovetop at high temperatures, such as sautéing, frying and stir-frying. It can also be used in marinades, sauces and dressings, or a drizzle can be used to complete dishes.

Is Avocado Oil Healthy?

According to the USDA Nutrient Database, one tablespoon of avocado oil provides 124 calories, 14g total fat, 1.62g saturated fat, 9.88g monounsaturated fat and 1.89g polyunsaturated fat.

Pure avocado oil that is not mixed with other oils or adulterated with other particles (very high heat can lead to this) or metals has numerous health benefits. One benefit of monounsaturated fats is heart health. According to the American Heart Association and World Health Organization, unsaturated fats like monounsaturated fats are recommended to replace saturated fat and trans fat whenever possible.

Avocado oil is an excellent source of vitamin E. This vitamin is an antioxidant that helps protect cells from damage. Further, vitamin E helps support immune function, helps maintain eye and skin health, and helps support nerve function. The vitamin also helps fight inflammation, which helps decrease long-term inflammation leading to chronic disease.
