How We Tested
We began by unboxing the GreenPan Spectra 10-Piece Cookware Set, reviewing the manual and care instructions as we did so. Each piece was inspected for quality and washed before use. We paid close attention to the weight, handle comfort and construction of each pan, noting first impressions and any spots that looked interesting or impressive. From there, we put the cookware through a series of cooking tests designed to reflect a basic week in the average home cook's routine, ranging from high-heat searing to delicate egg cookery.
Nonstick Test: To test the coating's slickness, we fried and scrambled eggs in the fry pans with no added butter or oil. The results were impressive: Fried eggs slid cleanly from the surface with no resistance or lifting with a spatula. The scrambled eggs were cooked gently and evenly without leaving behind any films or residue on the pan.
Simmering Test: To test the saucepan, we brought a jar of pasta sauce to a simmer and timed the process. At this point, we looked for any spots where the sauce might have scorched or burned while heating. We were happy to find that neither occurred during the sauce's rapid road to simmering.
Boiling Test: We brought three quarts of water to a rolling boil, timing the process. Then, we added a full pound box of spaghetti to the water to see if it could easily fit in the pot with the water, and if any noodles stuck out over the edge. While about one inch of the pasta did stick above the surface of the water, it quickly sank down as the noodles softened, leading to completely even pasta.
Browning and Oven Test: In the sauté pan, we seared a batch of meatballs, noting how well they browned and if one side of the pan was darker than the other. Once the meatballs were seared on all sides, we added the pasta sauce from the previous test and put the whole pan in the oven to let the meatballs cook completely through. This allowed us to determine how easy it was to move the pan in and out of the oven and how well the pan could go from stovetop to oven and back.
Searing Test: Hybrid pans tout superior searing capability, so we put that to the test by cooking skin-on chicken thighs. We started the thighs in a cold pan with no oil and maintained heat until the skin had browned, the fat had rendered and the chicken was cooked through. This process requires even, responsive heat, as unregulated temperature can easily burn the chicken. In the Spectra, the result was golden, crispy skin with no sticking. In a regular stainless-steel pan, we would expect to see some brown fond on the bottom of the pan, which would whisk up into a gorgeous pan sauce. The nonstick coating prevents this from forming, but that's not an obvious deal-breaker to everyone.
Sautéing Test: To test the searing capabilities further, we cooked a handful of halved baby potatoes in a tablespoon of olive oil, tossing and stirring as needed to achieve browning on all sides. The sloped sides and sturdy handle made tossing easy and natural, though some may find the pan on the heavier side. The pan responded quickly to changes in heat and gave us good control, making it a top choice for stir fries, sautéed onions or anything that requires constant motion.
After each test, we hand-washed the pans with warm, soapy water and a soft sponge (the included Wonder Sponge worked well). Thanks to the ceramic coating, no scrubbing was required after any of the tests we conducted. There were no signs of staining or degradation, even after cooking acidic tomato sauce in the oven.

Our Review of GreenPan's Spectra Cookware Based on Testing
Performance: Across all our tests, from boiling pasta to browning chicken thighs, the Spectra cookware set proved itself to be a reliable and versatile kitchen workhorse. The hybrid surface really did deliver on its promise, offering the searing capabilities of stainless steel with the fuss-free food release of any great nonstick pan. Eggs cooked without oil and slid off the surface without so much as a prod from a spatula.
Thick tomato sauces simmered without scorching or sticking. The tri-ply construction provided even heat distribution with no hot spots, and every piece held up well to oven use and quick stovetop adjustments, responding to temperature changes rapidly. Whether we were searing, sautéing or simply boiling water, the Spectra set performed like the top-notch cookware it is.
Features and Appearance: We appreciated the sleek, polished exterior and seamless stainless handles, which stayed cool to the touch during most stovetop use. Lids fit snugly and didn't rattle during cooking. The etched stainless-steel cube pattern on the surface of the pan has an interesting look, but it aided performance far beyond aesthetic appeal.
The entire set has an ultra-high temperature threshold of 850°F, higher than any other set we've tested to date. This not only allows you to go from stovetop to oven, but it also adds a layer of forgiveness for less experienced cooks. A higher temperature threshold means you're far less likely to accidentally damage the coating by overheating the pan, something that's surprisingly easy to do with lower-grade ceramic or traditional nonstick cookware. Whether you're cranking the burner to get a good sear or roasting directly in the oven, the Spectra set can take the heat without warping, peeling or compromising its performance.
Care and Maintenance: Simply put, care and maintenance of these pans is a breeze. Nothing clung to the surface, even after searing or roasting. We hand-washed all the pieces after each use, though the pans barely needed much more than a quick wipe with a wet towel to get sparkling new again. While the set is technically dishwasher-safe, GreenPan recommends hand washing to ensure the longest possible life for the pans. Still, we ran all the pans through the dishwasher and did not find any damage to the coating or warping of the body or handle.
Price and Value: The Spectra line offers a lot and is priced accordingly. While some sets may be a fraction of the price, those sets are likely not as durable, and you'll find yourself replacing the entire set sooner rather than later. This set is an investment into years of great cooking, making it a smart buy for beginner or intermediate cooks alike. Considering the quality and performance, the value here is strong.
