4 ounces bacon, diced

1/8 cup clarified butter

1 medium onion, diced

1 1/2 tablespoons flour

1/2 teaspoon chili powder

1 can red kidney beans

1 1/2 cups cold water

1 cup dry white wine

1 cup sour cream

Freshly ground salt

Freshly ground pepper


  1. Fry bacon in pan and add clarified butter. Stir in onion and cook until soft. Add flour and chili powder and cook another 3 minutes. Add beans and 1 cup water to thicken mixture. Cook over low heat for 1 hour. Gradually add white wine and remaining 1/2 cup water. Finally stir in sour cream and simmer 10 minutes. Season with salt and pepper and serve at once.
