Molly’s girls get vegetables into them in one of two ways: air-fried broccoli or green smoothies. So, she’s marketing this one as…a hot smoothie? Ha! It’s super-sippable and gets its richness from cannellini beans, so it's extra energizing.

Directions
Heat a large pot over medium-high heat and add the olive oil. Once hot, add the onion and a pinch of kosher salt and cook, stirring occasionally, until softened, 5 to 7 minutes. Add the garlic and crushed red pepper and cook for another minute. Add the stock, beans, broccolini, potato, Parmesan rind, 1/2 teaspoon kosher salt and a bunch of ground black pepper, cover and bring to a boil. Reduce to a simmer and cook, stirring occasionally, for 20 to 30 minutes, until a fork pokes easily into a potato piece.
Remove the Parmesan rind, then purée the soup in a high-speed blender or keep it in the pot and use a stick blender to blend until smooth. If using a standard blender, you may need to do this in batches as you don’t want to fill your blender more than halfway when you’re puréeing hot stuff. Return the mixture to the pot over low heat and add the shredded Parmesan, stirring until melted. Stir in the lemon juice, taste and adjust the seasonings as desired.
Ladle into mugs and finish with a drizzle of olive oil and a sprinkling of flaky salt.
Tools You May Need
When blending hot liquid, first let it cool for five minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth.
