Cincinnati Style Chili Pizza

  1. Place a pizza stone or baking steel on the top rack of the oven. Preheat the oven to 500 degrees F for 1 hour.
  2. For the chili: Brown and drain the ground beef, then blend into a paste. Sauté the onions and garlic in the pan until translucent. Add the tomato sauce, vinegar and 2 cups water. Add the cocoa powder, paprika, Worcestershire sauce, chili powder, allspice, cumin, cinnamon, salt and cayenne pepper. Add the ground beef. Bring to a light boil and simmer.
  3. For the pizza: Stretch the pizza dough to the desired size. Add 4 ounces Cincinnati-style chili. Add the pizza cheese.
  4. Using a pizza peel, launch the pizza onto the extremely hot stone or steel. Bake for 4 minutes (stone may take an additional minute). If a crisper crust is desired, switch the oven to broil and broil for an additional one to two minutes. (Watch closely to avoid burning.) Remove from the oven. Finish with the hot sauce, onions, Cheddar and dollops of a blend of the whipped ricotta/sour cream.
