This refreshing cold ramen salad combines chewy chilled noodles with crisp vegetables, fresh herbs and a savory-sweet miso vinaigrette. It’s finished with toasted sesame seeds, fried garlic and crushed peanuts for final flavor and texture.
For the miso vinaigrette: Combine the rice vinegar, miso, honey, sesame oil, soy sauce, sesame seeds and garlic in a medium bowl. Whisk until combined. Set aside.
For the ramen salad: Bring a large pot of salted water to a boil. Cook the ramen noodles according to package directions until tender but still chewy. Drain and rinse under cold water. Add to a large bowl and toss with the sesame oil. Chill the noodles.
Add the cucumber, carrots, Fresno chile, scallions, mint, basil and cilantro to the bowl with the chilled noodles. Pour the miso vinaigrette over the salad and toss until the noodles and vegetables are evenly coated.
For the garnish: Transfer the salad to a serving platter or individual bowls. Sprinkle with the toasted sesame seeds, fried garlic and crushed peanuts just before serving.
Cook’s Note
Cut the vegetables into similar-sized pieces for best results; a mandoline can help by making even slices for thin, matchstick julienne. Chilling the noodles helps to keep their chewy texture.
