Air Fryer Pork Chops with Potatoes and Carrots

Pork chops, potatoes and carrots get the air fryer treatment in this healthy one-pan meal. The pork and veggies are perfectly seasoned with a smoky, savory blend of smoked paprika, garlic powder, onion powder and dried basil, ensuring a dish that appeals to both kids and adults. With minimal cleanup and maximum flavor, this simple recipe makes weeknight dinner a breeze.

Special equipment:
a 6-quart air fryer
  1. Mix together the garlic powder, onion powder, dried basil, smoked paprika, 1 teaspoon salt and a few grinds of black pepper in a small bowl. Transfer 1/4 teaspoon of the spice mixture to a medium bowl and toss with the potatoes, olive oil and carrots.
  2. Place the pork chops on a baking sheet and sprinkle half of the remaining spice mixture over one side. Flip the chops and sprinkle the remaining spice mixture on the other side.
  3. Add the potatoes and carrots to a 6-quart air fryer and cook at 400 degrees F until the vegetables start to turn light brown and shiny around the edges, 10 to 13 minutes (see Cook’s Note). Add the pork chops to the air fryer, laying them on top of the carrots and potatoes. Cook until the pork reaches an internal temperature of 145 degrees F, about another 10 minutes.
  4. Transfer the pork chops onto 4 plates and allow them to rest for 5 minutes. If the potatoes and carrots are not completely tender yet, continue to cook until tender, 3 to 5 minutes. Serve the potatoes and carrots with the pork chops, drizzling with any of the juices left in the bottom of the air fryer.
