Directions
Combine the breadcrumbs, paprika, dried thyme, 1 teaspoon kosher salt, the onion powder, garlic powder, sugar and a few grinds of pepper in a large resealable bag; shake to mix well. Drizzle the olive oil into the bag and shake to combine. Beat the eggs in a shallow bowl.
Working in batches, dip the pork chops in the eggs, allowing the excess to drip off. Add to the bag with the breadcrumb mixture and shake until well coated.
Heat a 6-quart air fryer to 400 degrees F. Spray the air-fryer basket with cooking spray. Add half of the pork chops and air-fry until golden, about 6 minutes, flipping halfway through. Transfer to a rack and air-fry the remaining pork chops. Serve with applesauce and vegetables.
