Make the cornbread: Preheat the oven to 375 degrees F and butter a 9-by-13 inch baking dish. Whisk the cornmeal, flour, sugar, baking powder, salt and baking soda in a bowl. Whisk the eggs, buttermilk, maple syrup and melted butter in a second bowl, then whisk into the flour mixture. Transfer to the baking dish and bake until golden brown, 25 to 30 minutes. Let cool, then cut into 3/4-inch cubes. Let dry out, uncovered, 1 to 2 days.
Make the stuffing: Preheat the oven to 350 degrees F; butter a 3-quart baking dish. Melt 1 stick butter in a large pot over medium heat. Add the sausage and brown, stirring, 4 to 5 minutes. Add the leeks, celery, apple, sage and thyme; cook, stirring, 5 minutes. Add 1 teaspoon salt, 1/2 teaspoon pepper and the broth and bring to a simmer.
Whisk the eggs in a large bowl. Stir in the parsley and cornbread, then stir in the broth mixture. Fold in the cheddar. Transfer to the baking dish; dot with the remaining 2 tablespoons butter. Cover with foil and bake 30 minutes, then uncover and bake until golden, 25 to 30 more minutes. Let rest 10 minutes before serving.
