These soft whoopie pies filled with a simple buttercream are eggnog in cookie form, from the warm holiday spices to the rum-laced buttercream. Using a small ice cream scoop will ensure you get evenly sized cookies so they sandwich together neatly. Decorate the sides with whatever pretty sanding sugar or edible glitter you like, or leave them naked if you prefer.

Directions
Position racks in the upper and lower thirds of the oven; preheat to 375 degrees F. Make the cookies: Whisk together the flour, baking powder, cinnamon, allspice, nutmeg and salt in a medium bowl. Beat the butter, granulated sugar and vanilla paste in a large bowl with a mixer on medium-high speed until light, about 3 minutes. Beat in the whole egg and egg yolk, then reduce the mixer speed to low and beat in the flour mixture in 3 additions, alternating with the milk in 2 additions, beginning and ending with the flour.
Line 3 baking sheets with parchment paper. Scoop mounds of batter (about 2 tablespoons each; an ice cream scoop works well) 2 inches apart on the prepared pans. Refrigerate 30 minutes.
Bake 2 of the baking sheets, switching them halfway through, until the cookies are puffed and set, 11 to 14 minutes. Let cool 5 minutes on the pans, then transfer to a rack to cool completely. Repeat with the remaining baking sheet.
Meanwhile, make the filling: Beat the butter, confectioners’ sugar and salt in a large bowl with a mixer on medium-low speed to combine. Increase the speed to medium-high; beat until smooth. Add the rum and vanilla paste and beat until fluffy, 1 to 2 minutes.
Spread the filling on the flat side of half of the cookies; sandwich with the remaining cookies. Roll the edges in nonpareils and dust the tops with confectioners’ sugar.
