Furikake-Crusted Salmon

This quick, easy and satisfying weeknight dinner features salmon brushed with a bright and umami-packed mixture of mayo, soy sauce and hot mustard, then coated in a blanket of furikake – a rice seasoning mix that typically includes seaweed, sesame seeds, salt and other spices – to keep the salmon moist during baking. Furikake comes in a variety of flavors, but we recommend original or wasabi for this dish.

  1. Preheat the oven to 425 degrees F. Line a baking sheet with foil and brush 1 tablespoon of the oil over the foil. Place the salmon on the foil skin-side down. Season evenly with 1/4 teaspoon salt and set aside.
  2. Mix the mayonnaise, soy sauce and mustard in a small bowl until combined. Spread the mayo mixture over the top and sides of the salmon. Sprinkle the furikake evenly over the top, lightly pressing it into the mayo mixture.
  3. Toss the broccoli florets, 1/2 teaspoon salt and the remaining 1 tablespoon oil in a large bowl until thoroughly combined. Scatter the broccoli around the salmon.
  4. Bake until the salmon is opaque and cooked through and the broccoli is tender, 12 to 15 minutes, depending on the thickness of the salmon. Cut the salmon into 4 portions and divide among 4 plates. Serve with the broccoli, steamed white rice and lemon wedges.

Cook’s Note

Furikake is a seaweed seasoning blend, often sprinkled over rice, that can be purchased online or in Asian grocery stores and comes in a variety of flavors, such as wasabi, shrimp or traditional. Hot mustard, both Chinese- and Korean-style, can be purchased online or in Asian grocery stores. Both types will work in this recipe, though we recommend the Korean-style hot mustard for its strong and bright mustard flavor.
