Preserved lemons are lemons that have been cured in salt to soften the rind and give the fruit a unique depth and richness. Here, we combine grilled chicken with an earthy salad of beets, lentils and endive tossed in a bright and crunchy preserved lemon and pistachio dressing. It's ideal for a healthy meal that’s bursting with flavor and texture.

Directions
Make the dressing: Combine the preserved lemon rind, shallot and vinegar in a medium bowl; set aside 5 minutes. Stir in the honey, then slowly whisk in the olive oil. Stir in 1/4 cup pistachios and season with salt and pepper. Remove and set aside 1/4 cup of the dressing, then add the beets and lentils to the bowl with the remaining dressing; toss to coat.
Preheat a grill or grill pan to medium-high. Cut the chicken breasts in half horizontally to make 4 thinner pieces. Pat dry with a paper towel. Place the chicken between 2 pieces of plastic wrap and pound to 1/4 inch thick with a mallet or skillet. Brush the chicken lightly with olive oil and season with salt and pepper.
Grill the chicken, turning once, until cooked through, about 2 minutes per side. Divide among plates.
Toss the endive with the beets, lentils and reserved 1/4 cup dressing, then add to the plates. Scatter the mint and remaining 2 tablespoons pistachios on top.
