Inspired by the bright, fruity flavors of a lemon-blueberry muffin, these satisfying energy balls are high in fiber with 6 grams in a serving of two (see Cook's Note). They're conveniently no-bake, and whipping up a generous batch of 2 dozen is a cinch. Oats, almonds, pecans, flaxseed and chia seeds are quickly whirled in a food processor, with almond butter and maple syrup pulsed in for richness and sweetness. Dried blueberries and fresh lemon zest and juice add a sweet-tart finish that will remind you of a delicious baked muffin. Roll each ball in coconut for the perfect finish to these easy, healthy treats.

Ingredients

Directions

  1. Pulse the oats, pecans, almonds, flaxseed, chia seeds, lemon zest and salt in a food processor until the nuts are finely ground. Pulse in the almond butter, maple syrup, lemon juice and vanilla until a paste forms. Transfer the paste to a medium bowl and knead in the dried blueberries until evenly distributed.
  2. Put the coconut in a shallow bowl or on a plate. Scoop up the dough a tablespoon at a time and roll it into balls with your hands. (You can oil your hands lightly with a neutral oil like vegetable or canola if the dough sticks.) Roll each ball in the coconut until lightly coated. Refrigerate until chilled and slightly firmer, about 15 minutes. You can refrigerate the bites in an airtight container for up to 2 weeks.

Cook’s Note

Food Network defines high-fiber as 5 grams or more of fiber per serving.
