This hearty yet light Vietnamese-inspired dinner brings together savory pork meatballs, crisp-tender baby bok choy and delicate rice noodles, all tied together with a bright and tangy nuoc cham-style sauce. A quick blast under the broiler lightly chars the meatballs and bok choy for a deeper, caramelized flavor. Top with fresh cilantro and crushed peanuts for a cool, crunchy finish.

Directions
Bring a large pot of water to a boil. Make the sauce: Combine 1/4 cup water, 2 tablespoons fish sauce, the lime juice, 1 tablespoon plus 2 teaspoons brown sugar, 1 grated garlic clove and the Thai chile in a small bowl and stir until the sugar dissolves; set aside.
Preheat the broiler with a rack set about 6 inches from the heat. Combine the ground pork, 2 tablespoons water, the oyster sauce, the remaining 1 teaspoon each fish sauce and brown sugar and 2 grated garlic cloves, 1/2 teaspoon salt and a generous grinding of pepper in a large bowl. With your hand held like a claw, stir vigorously in one direction until the meat is lighter in color and forms a film on the sides of the bowl, about 1 minute. With wet hands, form into 16 meatballs and arrange on a baking sheet.
Spread out the bok choy on another baking sheet. Drizzle with the vegetable oil and season with salt and pepper; toss. Broil the bok choy, stirring once, until crisp-tender, 3 to 5 minutes. Broil the meatballs, flipping every 2 minutes, until cooked through and lightly charred, 6 to 7 minutes.
Cook the noodles as the label directs; drain and rinse, shaking off the excess water. Divide among plates. Top with the meatballs, bok choy, cilantro, peanuts and a drizzle of sauce.
