a 4-inch ring mold
  1. For the spicy mayo: Mix the mayonnaise, harissa, and lemon zest and juice in a small bowl; cover and chill.
  2. For the slaw: Toss the onion, jalapeño, cabbage, pickles, cilantro, mint, oil and vinegar in a large bowl to combine. Set aside.
  3. For the fried chicken: Mix the pepper, salt, cayenne, chili powder and cumin with the chicken, then form patties using a 4-inch ring mold.
  4. Pour the buttermilk into a shallow bowl. Put the flour in a shallow bowl. Put the panko in a shallow bowl. Dip the chicken patties in the flour, then the buttermilk, then the panko.
  5. Pour the duck fat into a large heavy skillet to a depth of 1/2-inch. Cook the patties until cooked through to 165 degrees F, about 3 minutes per side.
  6. Preheat the oven to 350 degrees F.
  7. Spread the cut sides of the buns with the butter and place on a sheet tray. Put into the oven and toast, about 3 minutes. Spread the buns with the spicy mayo. Build the sandwiches with the chicken and slaw.
