Honey Peanut Butter Truffles

2 1/2 cups confectioners' sugar

1 cup creamy peanut butter (not natural)

5 tablespoons unsalted butter, melted

1/2 teaspoon vanilla extract

1/4 teaspoon kosher salt

Finely chopped honey-roasted peanuts, for rolling


  1. Beat the confectioners' sugar, peanut butter, melted butter, vanilla and salt in a large bowl with an electric mixer on medium speed until well combined. Roll rounded teaspoons of the mixture into balls and roll each ball in the chopped peanuts. Place the truffles on a parchment-lined baking sheet. Chill until very cold and firm, about 20 minutes.
