1 cup yellow cornmeal

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon Cajun spice

1/2 teaspoon cayenne pepper (optional)

1 cup finely chopped onions

1/4 cup cut corn

2 large eggs

1/4 cup buttermilk

8 ounces canola oil


  1. Mix the dry ingredients, chopped onions and cut corn. Combine the eggs and buttermilk. Add buttermilk mixture to dry ingredients. Stir well. Use a tablespoon or your hands to form patties. To enhance flavor, deep fry patties in the same oil that was used to fry fish or use 8 ounces of vegetable oil heated in an iron skillet to 350 degrees.
