Gus's Chicago Style Hot Dog and Hand-Cut Fries

Nothing says Chicago like a Chicago Dog. And nothing says Chicago like my father Gus. This recipe is a replication of our favorite hot joint in Chicago-land, Gene & Judes. My father brought us here all the time as kids (and adults) and this is about as close as you can get to that experience.

a deep-fry thermometer or deep-fryer
  1. For the hot dogs: Bring a few inches of water to a simmer in a medium pot. Working in batches, add the hot dogs to a steamer basket and set it in the pot. Cover and steam until the dogs start to darken in color and get super shiny, 5 to 7 minutes. Add the buns during the last minute or two and steam until properly hydrated and squishy but not wet.
  2. For the skin-on fries: Heat the oil to 350 degrees F in a 5- to 6-quart pot or Dutch oven over medium heat, or use a deep-fryer.
  3. Working in batches, fry the potatoes until golden brown, 5 to 6 minutes. Place on a sheet pan fitted with a wire rack to keep crispy and immediately season with salt.
  4. To serve: Assemble the hot dogs and top with the pickle relish and any other desired toppings. Plop a big handful of hot fries on top and wrap up each dog in some parchment or deli paper. Let the dogs sit for at least 1 minute or up to 10 minutes to let everything get steamy and delicious. Open and unfurl. Keep half the fries on top of the dog and sprinkle with some celery salt before eating. Trust me.
