Roasted Turkey Club with Crispy Bacon and Giardiniera Aioli

  1. Preheat the oven to 400 degrees F.
  2. To make the BBQ chip dust: Mix together the turbinado sugar, ancho chile powder, cayenne, granulated garlic, onion powder, salt and pepper in a small bowl.
  3. For the club: Brush the turkey breasts with the Dijon mustard and coat in the BBQ chip dust on all sides. Place on a well-oiled wire rack-lined sheet pan and place in the oven. Roast for about 25 to 30 minutes or until the internal temperature registers 160 degrees F. Let cool completely, then thinly slice.
  4. Place the bacon on a parchment-lined sheet pan. Bake until crisp, 10 to 15 minutes. Drain on a plate lined with paper towel.
  5. To make the giardiniera aioli, mix together the mayonnaise, giardiniera, stone-ground mustard and granulated garlic in a bowl until smooth. Set aside.
  6. On a slice of bread, pile on some of the turkey, then three slices of bacon, then sliced tomato. Add a pinch of flaky sea salt to the top of the tomato. Schmear some of the giardiniera aioli on another slice of bread and adhere plenty of iceberg to the aioli. Slice the sandwich into two triangles and serve. Repeat to make 3 more sandwiches.
