Seared Branzino & Shrimp Red Curry with Jasmine Rice

  1. Heat a large Dutch oven over medium heat with the vegetable oil. Add the red bell pepper and sauté for 5 minutes, stirring occasionally, then add the curry paste, ginger and garlic and cook for 20 to 30 seconds or until fragrant.
  2. Stir in the coconut milk, crushed tomatoes, chicken stock, fish sauce and brown sugar. Bring to a gentle simmer and cook for about 10 minutes until thickened. Add the prawns, ensuring that they are mostly submerged in the sauce. Simmer for about 4 to 5 minutes or until the prawns are pink and cooked through. Just before serving, finish with the lime juice and adjust the seasoning to taste.
  3. Cut each branzino fillet in half on the bias and score the skin at the same angle with a sharp knife. Pat the skin side of the fish dry. Sprinkle the flesh with salt and pepper. Set aside until ready to cook.
  4. Heat a large nonstick pan with the olive oil over medium heat and cook the branzino, skin-side down, for 5 minutes, adding the butter halfway through. Once the skin is crispy, flip onto the flesh side using a fish spatula and cook for 3 minutes or until cooked through. Transfer to a paper towel-lined baking sheet until ready to serve.
  5. For the rice: Add the rice to a medium saucepan and cover with 3 cups water. Add the salt, lime leaves and lemongrass, then swirl the pot gently to mix, without stirring. Bring to a boil, then immediately reduce to a simmer. Cover and let simmer gently for 10 to 13 minutes. Remove from the heat and cover the pot with a clean kitchen towel, then place the lid back on. Let sit for 15 minutes. Discard the lemongrass and lime leaves and fluff with a fork. Set aside until ready to serve.
  6. Place the rice into each of 4 bowls and spoon the curry around the rice. Arrange the seafood on top of each bowl. Garnish with the Thai basil, mint leaves and peanuts, if using, and serve with lime wedges.
