Korean Braised Beef Sandwich

  1. Preheat the oven to 350 degrees F.
  2. Toss the beef with the salt and black pepper in a bowl and set aside. Heat the canola oil over medium-high heat in an ovenproof pot or Dutch oven. Sear the beef for about 2 minutes on all sides, then remove from the Dutch oven. Add the onions, carrots and garlic cloves to the Dutch oven. Cook, stirring, for 3 to 5 minutes. Add the ginger, beef broth, soy sauce, brown sugar and shiitake mushrooms, if using. Place the beef back in the Dutch oven, making sure to get the pieces in one layer, if possible. Cover the Dutch oven with a lid and place in the oven. Cook until it is fork-tender, 3 to 4 hours. Remove the beef from the Dutch oven and reduce the liquid on the stovetop over medium high-heat for about 10 minutes. Return the beef to the liquid and serve.
