This dish is the ultimate comfort food and a real favorite of Ree’s and Ladd’s when they’re home alone and fancy a light supper. You can experiment with your favorite beers and cheeses—and there’s no end to the number of things you can dip into it.

  1. Melt the butter in a medium pot. Add the red pepper flakes, salt, pepper and garlic. Cook until fragrant, 1 minute, then sprinkle over the flour and stir for another minute. Add the half-and-half, beer, mustard and Worcestershire sauce. Stir, then bring to a simmer; the mixture will be thick. Slowly add the grated cheeses and stir to help it melt. Serve in a warmed bowl, fondue pot or small slow cooker, alongside the pretzels, mini peppers, apple, cubed bread and carrots.
