Breaded and fried mozzarella is a traditional Italian appetizer or starter. For best results, Ree uses very fresh cheese, and a mixture of fresh and store-bought seasoned breadcrumbs.

Add the Italian loaf pieces to a food processor and pulse until small with some texture remaining. Place on a tray and dry for 2 hours, then mix with the seasoned breadcrumbs in a shallow dish. Sprinkle over the Italian seasoning, shredded Parmesan, parsley, salt and pepper, then toss to combine.
Add the beaten eggs to a second shallow dish and add the flour to a third shallow dish. Take a mozzarella slice and dredge it in the flour, shaking off the excess, then dunk in the egg, before pressing into the fresh breadcrumb mixture. Set on a parchment-lined tray and dredge all the remaining mozzarella slices.
Heat the oil in a skillet to 350 degrees F. (The oil needs to be at least 350 degrees F, or the coating will be soggy and will not brown before cheese begins to melt.)
Shallow-fry 5 slices per batch, being careful not to overcrowd the skillet, for about 1 minute per side. Remove to a paper towel-lined plate and serve warm with the warm marinara sauce.
