For the marinara sauce: Add the olive oil, onions, fresh tomatoes, garlic and carrots to a stockpot and simmer until the onions are translucent, 15 to 20 minutes. Add the plum tomatoes, crushed tomatoes, pepper, salt and basil to the pot and blend everything with a handheld immersion blender. Cook at medium heat, stirring occasionally, for 45 minutes.
For the meatballs: Preheat the oven to 375 degrees F.
Blend together the beef and pork in a medium bowl. Add the breadcrumbs, Pecorino-Romano, parsley, milk, salt, pepper, eggs, garlic and onion. Mix until combined.
Rub the olive oil lightly across 2 sheet pans. Form the meat into 2-ounce golf-ball-size meatballs and place them on the pans. (You may want to use an ice cream scoop to form the meatballs.) Bake until the meatballs are browned and the internal temperature is 165 degrees F, about 20 minutes. Add to the tomato sauce.
For the assembly: Fry the mozzarella sticks in a deep-fryer and set aside. Cut open a fresh Italian roll and add 2 slices provolone. Add 4 meatballs sliced in half, along with some marinara sauce. Garnish with 4 mozzarella sticks and some grated Pecorino-Romano. Cut in half and serve. Repeat to make 3 more servings.
