Tomatoes Stuffed with Brown Rice and Chihuahua Cheese

6 large beefsteak tomatoes

2 1/2 cups, cooked, cooled, short grain brown rice

1 cup flat leaf parsley, chopped fine

3/4 cup crumbled Mexican cheese

1/4 cup packed chopped fresh mint

3 cloves of garlic, chopped fine

1 Tbsp. olive oil

1 1/2 Tbsp. Mrs. Dash® Original Blend


  1. 1. Preheat oven to 325 degrees F. Prepare tomatoes by cutting off tops and scooping inside clean; set aside. In a medium size bowl mix all remaining ingredients.
  2. 2. Stuff mixture into tomatoes and bake for about 20-25 minutes uncovered.
  3. 3. Transfer to serving dishes using the stuffed tomato as an entree or vegetable accompaniment to your favorite protein.
