Wario's Roasted Pork

  1. Combine the salt, sugar, garlic, fennel, red pepper flakes, rosemary and lemon zest in a bowl. Mix well with your hands until incorporated. Place the pork shoulder in a pan, then massage the pork cure on all sides of the pork, including the inside, where the shoulder blade was removed. Set aside in the refrigerator for 4 to 6 hours.
  2. Preheat the oven to 350 degrees F.
  3. Remove the pork from the refrigerator. Dust off the excess pork cure, then place in an oven-safe pan. Add the stock, then cover with foil. Place in the oven until pull-apart tender, 3 1/2 to 4 hours. Remove from the pan and strain. Save the pork jus (liquid). Pull the pork, and put some of the saved pork jus in it.
