In Fertile, Minn., imaginations have run wild, dreaming up some of the freshest fair eats around. Beginning with the Dynamite Dog and the North Woods Sandwich, piled high with prime rib and finishing the day with Barbe'chos, a barbecue-nachos fusion, host Noah Cappe has a field day. Later, he heads north of the border to the Red River Exhibition in Manitoba, Canada, where quintessential Canadian cuisine gets a carnival twist with Prairie Poutine and a Habanero Crunch Burger.
Tyler Florence takes two common, inexpensive cuts of meat and transforms them into surprising meals. First, Pot Roast Tacos, made with meltingly-tender braised meat, tossed with sauce and served warm with delicious toppings, including Tyler's go-to guacamole. Then, there's Grilled Skirt Steaks with Hawaiian-Style Teriyaki Glaze that proves you don't need an outdoor barbecue to master grilled meat, as Tyler demonstrates the right techniques for seasoning and grilling and challenges the merits of meat marinades.
The finale. In the dark hours before dawn, the three remaining pitmasters find out that they have a marathon day of barbecue ahead. First, the competitors have to cook up and deliver a pre-game ballpark snack for season ticket holders at Yankee Stadium. Then, they have to cook up healthy barbecue for the cast of the musical, Mama Mia, and serve it on Broadway. Finally, they've got to deliver late night bar food for a crowd of Brooklyn bar-hopping hipsters. The winner earns the title of Best in Smoke and fifty thousand dollars.Buckhead BeefBest in SmokeBest BiteChild's PlayVendor WarsTriple Play
