Christmas Tree Cutting Party

Even cutting the tree is a party when friends gather at a Christmas tree farm for a warm and cozy meal by the fire of cioppino, roasted garlic bread, hot peppermint chocolate and Christmas cookies. Turn a Christmas chore into a unique celebration! GamePlan Day Before Party: Cook sugar, blend with whipped egg whites, and assemble dough for Torrone, allow to mix in mixer for 15 minutes. Place prepped and tin foil wrapped garlic in the oven to roast for Roasted Garlic Bread. Finish dough for Torrone, pan it and refrigerate overnight. Remove garlic from the oven, mash into paste and mix into a butter. Refrigerate. 2 Hour Before Party: Begin broth and sear fish and scallops for Cioppino, allow to broth to simmer without fish for 30 minutes. 1/2 Hour Before Party: Add fresh herbs to Cioppino, sear and remove clams, crabs and shrimp. Mix and heat up mulled wine, pour into a pre-heated thermos. Mix hot chocolate, pour into pre-heated thermos. Place Schnapps, two thermos’, bread, garlic butter, Torrone, Cioppino broth, and seared fish into a preheated cooler to transport. At Party: Serve hot cocktails. Grill garlic for Roasted Garlic Bread. Reheat Cioppino broth. Take out softened jalapeno chilies from broth and mash into a garnish. Spread Grilled bread with garlic butter, allow it to melt and serve. Add fish and shellfish back into Cioppino, simmer for one minute and serve. Slice up Torrone, eat and enjoy. Helping Michael along the way are pastry instructors from the L'Ecole Culinaire school, Missouri natives and lovers of all things goo. In Cincinnati, the ice cream may be cold, but this rivalry is steaming hot! Graeter's and Aglamesis have been churning out chocolate chip ice cream the old-fashioned way for over 100 years, and the good people of Ohio are divided. Take a step back in time as Michael Symon learns the techniques that give each hand dipped scoop that unmistakable flavor and he crowns a champion of the chip!

Ice Cream Pool Party

No matter how hot it gets, it's just too cool when Michael and his guests whip up a vanilla gelato with crazy variations. Making your own ice cream cones is almost as much fun! A fancy pre-frozen layered ice cream torta served with smashed strawberries brings it high cotton. Gameplan 1 Day Before the Party: Bring chocolate, strawberry and vanilla ice creams for Neapolitan to room temperature. Simmer and strain Mint Simple Syrup for Cantaloupe Granita. Peel and puree cantaloupe. Blend cantaloupe puree with Mint Simple Syrup and freeze overnight. Layer softened ice creams into a freezer-proof dish. Cover with plastic wrap and freeze overnight. Heat cream and espresso to blend with chocolate for Chocolate Hazelnut. Set aside. Clean, core and quarter strawberries for Strawberry Balsamic Sauce. Blend strawberries with balsamic vinegar. Season and allow to marinate. Stir Cantaloupe Granita. Blend Mint Pesto with one pint of vanilla ice cream and return to the pint. Cover and freeze overnight. Blend Chocolate Hazelnut Ganache with one pint vanilla ice cream and return to pint container. Cover and freeze overnight. Blend one pint vanilla ice cream with Strawberry Balsamic Sauce and return to pint container. Cover and freeze overnight. Blend batter for Ice Cream Cones. Cover and refrigerate overnight. Place plates for Neapolitan in freezer, freeze overnight. 1 Hour Before Party: Bake and shape Ice Cream Cones on a parchment paper covered baking sheet. Place milk for Egg Creams in freezer for 15 minutes. Unmold Neapolitan and slice into one inch slices and place on pre-frozen plates. Drizzle with Strawberry Balsamic Sauce. At the Party: Blend Egg Creams and serve. Scoop and serve Blended Ice Creams and Ice Cream Cones. Scoop and serve Cantaloupe Granita. Eat and Enjoy!
