Team Buddy

This season the cakes are bigger, better and more over-the-top! Get to know the team helping Buddy Valastro bring his cake creations to life.

Ralph is Buddy’s longtime right-hand-man and the Head Sculptor at Carlo’s Bakery. Buddy relies on him to help him turn his crazy cake visions into reality.

Laurent is the executive pastry chef for the Walt Disney World Swan and Dolphin Resort. A native of France, Laurent is a highly accomplished pastry chef who holds the distinction as the only two-time winner of the World Pastry Team Championship. He captained Team USA to victory in 2008 after previously winning in 2002.

Laurent was trained in France and is certified as a Pastry Chef; Chocolate-Maker, Ice-Cream Maker and Confectioner. He holds a CAP degree from a French Culinary Institute in Vincennes. He is most noted for his sugar showpieces, resulting in intricate designs, all accomplished by pulling sugar.

Liz has been the Head Cake Decorator at Carlo's Bakery since 2010 but has been part of the Carlo’s Family since 2007. She’s been a part of every season of Cake Boss and was a judge on two episodes of Bake It Like Buddy for Discovery Family.
