Gluten-Free Holiday Baking Made Easy

The holidays just wouldn’t be the same without cookies. Whether you pack them up and ship them to family, serve them at your holiday party or leave a plate for Santa, there’s no denying that they spread plenty of Yuletide cheer. But, what do you do if someone in your family can’t eat gluten? Luckily, we’ve got lots of great gluten-free baking ideas, including holiday cookies! You’ll find all the classics here, like gingerbread men, pignoli cookies and macaroons—and even these chewy sugar cookies. Rather than subbing all-purpose flour with a gluten-free blend, we used instant pudding mix (and rice and coconut flours) to give these cookies their gooey texture. You can even swap out vanilla for your own favorite pudding flavor, such as chocolate or caramel. The dough is equally ideal for making large rolled cookies or cutouts, too!

Giant Sprinkle Macaroons

Macaroons (not to be confused with French macarons) are a popular treat among Jewish-Americans, especially during Passover when they must abstain from eating any type of grain. These beauties are therefore naturally gluten-free. Molly Yeh takes these just one step further by giving us a funfetti-inspired macaroon recipe.

Forgotten Cookies

These meringues are crispy on the outside and marshmallow-y on the inside, with bits of chocolate throughout. The best part of this recipe is that you turn off the heat once the cookies go in the oven, so you can truly forget about them until the morning. A spring-loaded ice cream scoop makes fast work of forming the meringues and you can use any size you like.
