Air Fryer Salmon and Brussels Sprouts for Two

This recipe uses simple tricks to get a light, quick dinner for two on the table with the help of the air fryer. We cook the salmon and Brussels at the same time, and make a tangy lemon-honey dressing in the meantime. Pistachios, raisins, mint and dill add to the bright flavors of this speedy and delicious meal.



Special equipment:
an air fryer
  1. Preheat an air fryer to 400 degrees.
  2. Combine the raisins and water in a small bowl and set aside to soak.  
  3. Place the Brussels sprouts in a medium bowl. Add 1 teaspoon of the olive oil and a generous amount of salt and pepper and toss to combine. 
  4. Brush the salmon with the remaining 1 tablespoon oil, then sprinkle generously with salt and pepper. Place in the center of the air fryer basket and set the timer for 9 minutes. After 5 minutes, flip the salmon and distribute the sprouts around the fillets. Close the air fryer and finish cooking. 
  5. Combine the lemon juice, lemon zest, honey, mustard and a pinch of salt in a small bowl or in a jar with a tightly fitting lid and whisk or shake to combine. Taste and adjust the seasoning if necessary.  
  6. Drain the raisins and place them in a medium bowl. Add the sprouts, dill, mint and half of the dressing and toss to coat. Add more dressing to taste. Divide the sprouts between two plates and top with the pistachios and salmon fillets.
