Air Fryer Salmon Bites

These air fryer salmon bites are perfect on their own or over a rice bowl with your favorite veggies. Cutting the salmon into cubes helps it quickly soak up a simple marinade and the air fryer cooks the fish under high heat for a short period of time which allows the outsides to crisp up while keeping the insides moist and flaky. A homemade yum yum sauce inspired by the one commonly found in Japanese American "hibachi-style" restaurants ties it all together for the win; serve it as a dipping sauce or drizzle it over a rice bowl.

a 6-quart air fryer
  1. For the salmon bites: Toss the salmon with the oil, vinegar, garlic powder, paprika, 1 teaspoon of salt and several grinds of black pepper in a large bowl until well combined. Cover and refrigerate for at least 30 minutes and up to 1 hour.
  2. For the yum yum sauce: Meanwhile, whisk together the mayonnaise, ketchup, mirin, vinegar, garlic powder, onion powder, paprika, cayenne, a pinch of salt and several grinds of black pepper in a small bowl until smooth and combined. Cover and refrigerate until ready to serve.
  3. Add the salmon to a 6-quart air fryer, leaving some space between each piece to promote even cooking. Cook at 400 degrees F until the salmon is just cooked through and golden at the edges, 5 to 6 minutes (see Cook’s Note).
  4. Serve the salmon bites with the yum yum sauce for dipping or on top of a rice bowl with mixed greens, sliced cucumber and a drizzle of the yum yum sauce.
