Ree Drummond is hosting a Christmas cocktail party for a large group of good friends, with a tight time frame of just three hours. This festive and fabulous spread is filled with bites that are easy to prep ahead of time. 

Holiday Roll-Ups

These easy-to-make roll-ups can be made and stored in the fridge until party time. They are filled with a blend of cream cheese, ranch dressing mix and black pepper.

Tortellini Skewers

Ree gets into festive colors with these skewers that are all about the assembly: store-bought spinach tortellini, fresh mozzarella and cherry tomatoes. For a little extra flavor, drizzle on an easy pesto-packed vinaigrette dressing.

Christmas Queso

Ree makes this four-ingredient dip with large hunks of white blanco-style cheese, diced red chiles and tomatoes, along with jalapenos to amp up the spice factor and give a bit of green color. Once the cheese is melted, it's ready to serve with tortilla chips.

Shrimp-Pineapple Skewers

Wrap a slice of thin bacon around a piece of sliced pineapple and big fresh shrimp before placing on skewers that have been soaked in water (so they don't burn in the oven). Before popping them into the oven, brush on an Asian-inspired marinade of ingredients like salty teriyaki sauce, some sugar for a sweet edge and crushed red pepper flakes for heat.

Chocolate Mint Brownie Bites

Chocolate after-dinner mints are melted into the batter of these mini brownie bites that are then dipped in chocolate. To fully coat the mini cakes while avoiding any mess, use a spoon to spread the mixture on top instead of dunking the whole brownie in. Decorate the top with more chopped chocolate mints.
