Apple Crunch Pupcakes

Ingredients

2 3/4 cups water

1/4 cup applesauce

1/8 teaspoon vanilla

1 medium egg

2 tablespoons honey

4 cups whole wheat flour

1 cup dried apple chips

1 tablespoon baking powder

FROSTING: CAROB

12 ounces fat free cream cheese

3 teaspoons carob powder

1 teaspoon vanilla

FROSTING: BEET

12 ounces fat free cream cheese

1 teaspoon beet powder

1 teaspoon vanilla

Directions

  1. Preheat oven to 350 degrees.
  2. Mix water, applesauce, vanilla, egg and honey together. Combine flour, apple chips and baking powder. Add wet ingredients to dry and mix thoroughly, scraping sides and bottom to be sure no dry mixture is left.
  3. Pour into large muffin pans sprayed with vegetable spray. Bake at 350 degrees for approximately 1 to 1 1/4 hours, or until toothpick inserted in center comes out dry

  1. In a small mixing bowl stir all ingredients together until smooth
