When we needed a quick lunch or dinner, my mom would gravitate to making arroz con pollo because of its flavorful simplicity. Sometimes she would use shredded chicken and mix that directly into the rice, and sometimes she would sauté chicken breasts with herbs and spices and serve it on top of the rice. I like to do both!
Put the chicken leg quarters in a pot and add enough water to cover. Bring to a boil, then lower to a simmer; simmer until fully cooked, about 30 minutes. Remove the chicken from the broth and shred the meat, discarding any bones and skin. Set aside.
Put the chicken breast cubes in a medium bowl and add a generous amount of Sazon seasoning. Toss together, cover and refrigerate until ready to use.
In a heavy-bottomed pot on medium heat, add the bay leaves, a generous amount of Sazon, 1 tablespoon of the oil and half of the cilantro, garlic, onion and green and red bell peppers. Cook, stirring occasionally, until the onions are translucent, 3 to 5 minutes.
Rinse the rice until the water runs clear, then add to the pot. Add the chicken broth, frozen vegetables, olives, capers and reserved shredded chicken. Give it a good stir and bring to a boil. Reduce the heat to a simmer, cover and cook on low until the rice is tender, about 20 minutes.
Meanwhile, set a skillet over medium heat and add the remaining 1 tablespoon oil. Add the remaining cilantro, garlic, onions and green and red bell peppers and cook until the onions are translucent, 3 to 5 minutes. Add the cubed chicken breast and cook until browned, tender and cooked through, 10 to 15 minutes.
Serve the arroz con pollo in a bowl, topped with the sautéed chicken and some chopped cilantro. I like to eat mine with ketchup and hot sauce!
Cook’s Note
I think it tastes better when you go heavier on the olives and capers.
