Directions
Special equipment:
a deep-fry thermometer
For the baronne sauce: Combine the ketchup, olive oil, hot sauce, Worcestershire sauce, paprika, cayenne, garlic powder, pepper and salt in a food processor. Blend until smooth. Refrigerate.
For the baronne potatoes: Add the liquid crab boil, cayenne, salt, pepper and potatoes to water and boil until just cooked through, about 30 minutes. Soak the potatoes off the heat for 10 minutes. Drain, then allow to cool. Cube the potatoes; refrigerate.
For the baronne shrimp: Meanwhile, add the crab boil, black pepper, salt, hot sauce, garlic, cayenne, bay leaves, lemons, celery, onion and bell pepper to water. Bring to boil, then boil 10 minutes. Add the shrimp and continue to cook for 3 minutes. Remove from the heat. Allow to soak off the heat for 5 to 15 minutes, then drain. (The longer the soak, the more intense the flavor.) Refrigerate.
Coat the bottom of a sauté pan with oil. Fry the potatoes at 350 degrees F until medium brown, 5 to 10 minutes. Place the potatoes on a plate in a mound. Combine the shrimp and sauce in a sauté pan and heat through, about 2 minutes. Pour over the fried potatoes.
