Special equipment:
a deep-fryer or deep-fry thermometer
For the fried chicken bites: Mix the chicken pieces with the mustard and a few drops of buffalo sauce in a bowl until fully coated. Let marinate, refrigerated, for at least 2 hours (or overnight for more flavor).
Heat the oil to 350 degrees F.
Coat the chicken pieces in the flour, followed by the Cajun seasoning, salt, and pepper. Fry until golden and cooked through, 3 to 5 minutes. Drain on paper towels.
For the fried rice: Heat the oil in a large skillet or wok. Cook the smoked beef links until browned. Set aside. Toss the shrimp in the Cajun seasoning until fully coated. Cook the shrimp until pink, 2 to 3 minutes. Set aside. Sauté the onion, bell pepper and jalapeño until soft, 3 to 4 minutes. Add the garlic and cook for 30 seconds. Stir in the rice and cook for 3 to 4 minutes. Add a dash of soy sauce and stir well. Add the shrimp and sausage back to the pan. Season with Cajun seasoning, salt and pepper. Toss to combine.
Plate the fried rice. Top with the crispy chicken bites. Garnish with the green onions.
