These beefy sandwiches take me back to my New Jersey days when I would visit the city and pick one of them up at the corner bodega. Hamburger patties are browned and chopped with onions and cooked in a special seasoning blend. Then American cheese is melted on top. Scoops of the gooey mixture are then loaded on to sauced sub rolls and topped with lettuce, tomato and pickles. It's the ultimate sandwich!
For the seasoning: Stir together the House Seasoning, cumin, coriander, oregano, turmeric and cayenne pepper in a small bowl. Set aside.
For the burger sauce: Stir together the mayonnaise, ketchup, relish, salt and pepper in a small bowl. Set aside.
For the sandwiches: Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion to the skillet and sprinkle with some of the seasoning. Cook until the onion begins to soften, about 3 minutes. Move the onions a bit to the side, then add the patties on top and sprinkle some more of the seasoning. As the meat begins to brown, use a metal spatula to chop it up and flip occasionally. Continue to cook until the meat is browned and the onion is tender, chopping and flipping with the spatula. Season with salt and pepper.
Arrange the cheese slices on top of the chopped burger and onion. Chop a little more to incorporate the cheese.
To serve, spread the burger sauce on the insides of the rolls. Top evenly with the burger mixture, lettuce, tomatoes and pickles. Drizzle with more burger sauce, if desired, and serve.
Miss Brown's House Seasoning:
Yield:5 teaspoons
Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.
