For the heifer sauce: Add the mayo, ketchup, pickle juice and seasoning salt to a bowl and mix thoroughly.
For the burger: Cook the patties on a cooktop, 3 to 5 minutes.
Meanwhile, cut the focaccia buns in half and toast on the cooktop in some melted butter until toasted. Remove the buns, then add the lettuce, tomatoes, pickles, red onions and heifer sauce to the buns. Flip the patties and when 90% cooked to the desired temperature, douse the patties with 1 cup Cheddar each and cover with a lid. Add a small amount of water to create steam under the lid to help melt the cheese. Once the cheese skirt starts to turn dark on the edges, remove from the heat and put the meat and cheese on the buns. Let rest for 2 minutes, then enjoy!
