  1. Add the smoked turkey to a large pot, then pour in the chicken broth. Stir in the greens a handful at a time, letting them wilt before adding more. Add the garlic and onion. Bring to a boil, then reduce the heat and simmer until the meat starts to tenderize and flavors infuse, 30 to 40 minutes.
  2. Add the vinegar, sugar, red pepper flakes, salt and pepper. Cover partially and simmer on low, stirring occasionally, until the greens are tender and the meat falls off the bone, 1 hour 30 minutes to 2 hours. Remove the smoked meat, shred it, and stir back into the pot. Taste and the adjust seasoning (sometimes a splash more vinegar brightens it up). Serve with cornbread to soak up the pot likker (the flavorful broth at the bottom).
