Cucumber with Black Caraway Seed

I experimented with this at my grandfather's house in Connecticut last weekend. We picked cucumbers from the garden, sliced them thin and assembled these delicious sandwiches!

whole grain bread, toasted

cucumber, thinly sliced

fresh mozzarella, thinly sliced

black caraway seeds (aka nigella, or black cumin)

sprinkle of salt


  1. Assemble a thin to medium (depending on preference) layer of cheese on slice of bread, and sprinkle with salt to taste. Add one layer of cucumber, and sprinkle on black caraway seeds. Press together bread to make a compact panini-style flat sandwich (but do not heat), slice, and enjoy!
